Corn Salad With Hummus, Feta, Peppers and Chicken

Salads get a bad rap. Sure, ice cream is probably the tastier choice, but that doesn’t mean salads can’t be delicious too. Especially one that takes less than 20 minutes, tastes good and will actually fill you up. With a few easily accessible ingredients and a big bowl, you’re ready to start mixing things up with this refreshing, summery corn salad. And if you’re looking for a good snack later on, get some pita bread and scoop up any leftovers.

Servings: 3

Ingredients:
3 ears of cooked corn
3 tablespoons hummus (I use Tribe)
1 cup feta cheese
3 orange or yellow peppers
1 cup Perdue© Short Cuts Carved Chicken Breast, Grilled

Directions:

1. After corn cools down, cut it off the cob.

2. Put the corn, hummus and feta in one large bowl.

3. Slice the peppers into thin, long strips.

4. Mix all the ingredients together. Serve and eat.
