This Chocolate Zucchini Bread Is Definitely The Most Delicious Way to Eat Your Veggies

Step aside, banana bread — there’s a new bread king in town. Next in the evolution of delicious fruit and vegetable based breads is chocolate zucchini bread. If you’ve ever doubted that a vegetable could be the base for a delicious dessert, we’re happy to be able to prove you wrong.

Cook Time: 1 hour
Total Time: 1 hour 30 minutes

Servings: 2 loaves

Ingredients:
3 cups all purpose flour
¼ cup cocoa powder
1 teaspoon salt
1 teaspoon baking powder
4 teaspoons cinnamon
½ teaspoon ground nutmeg
½ teaspoon clove (optional)
3 eggs
1 cup vegetable oil
2 1/3 cups white sugar
2 teaspoons vanilla
2.5 cups grated zucchini

Directions:

1. Preheat oven to 335°F. Grease and flour two 8″ x 4″ pans.

2. Mix flour, cocoa powder, salt, baking powder, cinnamon, nutmeg and clove in a medium bowl.

3. Beat eggs, oil, vanilla and sugar in a large bowl until well combined. Add dry ingredients to wet ingredients.

4. Add grated zucchini.

5. Pour into prepared pans. Bake 50 to 70 minutes until an inserted knife or toothpick comes out clean.
