Banana bread is on just about everyone’s favorite food list. It makes for the perfect breakfast, snack, late night munch…you name it. Whenever you have a few overly ripe bananas lying around, put on your baking hat, and transform those bananas into some delicious banana bread goodness (I promise you that as soon as it it comes out of the oven it will be impossible to resist!). This recipe comes from one of my favorite food blogs, Sally’s Baking Addiction. If you have the time, I highly recommend taking a look at some of her other recipes because they are all easy and scrumptious. So here it is, the ultimate banana bread recipe:

Prep Time: 10 minutes
Cook Time: 60 minutes
Total Time: About 70 minutes + cooling

Servings: 8-10

Ingredients:
½ cup unsalted butter, softened to room temperature
¾ cup  light brown sugar (or dark brown sugar)
2 large eggs, room temperature preferred
1/3 cup plain or vanilla Greek yogurt
2 cups mashed bananas (about 3 large very ripe bananas)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ teaspoon ground cinnamon
¾ cup dark chocolate chips or chunks (or semi-sweet)
1 cup halved raspberries, tossed in 1 tablespoon all-purpose flour to prevent sinking

Directions:
1. Preheat the oven to 350°F.
2. Using a mixer, cream together butter and brown sugar.

3. Add eggs, one at a time, beating well after each addition.

4. Beat in yogurt, bananas and vanilla. Set aside.

5. In another bowl, toss the flour, baking soda, salt and cinnamon together until combined.

6. Using a spatula, incorporate dry ingredients into wet mixture.

7. Coat rasberries in flour.

8. Fold in chocolate and raspberries

9. Transfer to a lightly sprayed 9×5 loaf pan.

10. Bake for 60 minutes.
