This article is written by a student writer from the Spoon University at Richmond chapter.

If finals have got you missing home, craving chocolate, and you’re ready for the holidays, then take a quick study break and whip up these chocolate peppermint muddy buddies. Addictively crunchy, sweet, and minty, these are so easy to make and even easier to eat in one sitting.

Instructions

  1. Claire Hogan

Place Corn Chex, Rice Chex, or a combination of both into a large gallon plastic bag.

  2. Claire Hogan

Unwrap peppermints and add peppermints to a separate plastic bag. Using a hammer, shoe, or anything you can find, crush the mints to a fine powder.

#SpoonTip: Double bagging your mints before you crush them will make it less likely for the bag to break and mint powder to spill everywhere.

  3. Claire Hogan

Measure out the chocolate chips into a microwaveable bowl or mug.

In the same bowl, add the peanut butter and coconut oil and microwave for 1 minute. Stir the mixture and if it is not fully melted, microwave the mixture for thirty second increments until it is pourable.

  5. Claire Hogan

Pour the chocolate mixture onto the cereal. Seal the bag tightly and shake it until the cereal is coated. Add the powdered sugar and crushed mints and shake up the bag again. Pour the muddy buddies into a bag and enjoy!

#SpoonTip: Leave air in the bag when you seal it so that the cereal has room to move around the bag.
