Chocolate Mayonnaise Cake Spoon Pops

  • 2 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 3 eggs
  • 1 2/3 cups sugar
  • 1 teaspoon vanilla extract
  • 1 cup Hellmann's® mayonnaise
  • 1 1/3 cups water
  • 1 box plastic soup spoons

  • Step 1

    Preheat oven to 350ºF. In medium bowl, combine flour, cocoa, baking soda and baking powder. Set aside.

    In large bowl, add eggs, sugar and vanilla and beat for 3 minutes or until light and fluffy.

    Mix in the mayo.

    Alternately beat in flour mixture with water, beginning and ending with flour mixture.

    Grease and flower a 13x9" pan and pour the batter in. Bake for 30 minutes.

    Wait until the cake cools completely and break it down into very small crumbles.

    Add 3/4 of the frosting to the cake and mix with your hands. Roll cake into 1" balls and place on a cookie sheet. Pop them in the freezer for 2-3 hours or overnight. (It is easiest to dip them in the chocolate when they are completely frozen).

    Melt the white chocolate chips in the microwave in 30 second increments. Be sure to stir!

    After the cake balls are frozen, dollop the melted chocolate on the spoon and add a cake ball.

    Use a separate spoon to spread the chocolate around on the cake ball. This will assure even coverage of chocolate.
