How To Make Chocolate Chip Peanut Butter Biscotti

You’ve been in school for a couple months. You’re tired of the same old college dining hall desserts. Well, here is the recipe for you – peanut butter and chocolate chip biscotti to enjoy with coffee or hot chocolate to feel #classy. Time to raid your college kitchenette and get baking.

 

Chocolate Chip Peanut Butter Biscotti

Ingredients
  • 10 tablespoon unsalted butter
  • 2 1/2 cup flour
  • 2 3/4 teaspoon baking powder
  • 3 large eggs
  • 1 1/4 cup white sugar
  • 2 teaspoon vanilla extract
  • 1/2 cup peanut butter
  • 1/2 cup chocolate nibs
  • 1/2 cup milk chocolate chips
  • 1/2 cup dark chocolate chips

Step 1

Collect all your ingredients.

Step 2

Melt all of the butter until it begins to brown, about 5 minutes.

Step 3

Whisk flour, baking powder, and salt together in a large bowl.

Step 4

Beat the eggs in a medium bowl with an electric mixer until light and pale yellow and gradually add sugar, butter, and vanilla while beating. Add the peanut butter and mix until combined.

Step 5

While mixing slowly, add the dry ingredients to the wet ingredients, in two additions. Mix until just it’s absorbed. Fold in the peanuts and chocolate pieces.

Step 6

Divide the dough evenly into thirds, and put each portion in the center of a baking sheet. Shape the dough into logs about 2 inches wide and 15 inches long. Bake until set and brown around the edges, about 25-30 minutes. Cool logs on baking sheets for about 10 minutes.

Step 7

Lower the oven temperature to 325 F and transfer logs to a cutting board. Cut the logs crosswise with a knife into 1/2 inch thick cookies. Place cookies cut side down on the baking sheets. Bake until crisp, about 8 minutes, flip the cookies over, and bake for another 8 minutes.
