Chocolate Chip Cookies You Can Make with Your Leftover Pancake Mix

Even though I don’t usually like breakfast foods, pancakes and waffles are easily my favorites. My parents would get the huge 10 pound bag of Krusteaz pancake mix at Costco. This worked great, until my siblings and I got tired of eating pancakes. Sure it never went bad, but it seemed like such a waste to have pancake mix and use it for something else.

So as it turns out, the things that you can make with pancake mix are not limited to pancakes and waffles. If you ever wanted to use your pancake mix for something other than breakfast, here’s how you can use your leftover pancake mix to make some delicious chewy chocolate chip cookies.

 

 

 

Pancake Mix Chocolate Chip Cookies

    Preheat oven to 350°F

    Beat brown sugar, shortening, butter, milk and vanilla extract until light and fluffy.

    #SpoonTip: Try using applesauce instead of shortening to reduce fat.

    Add banana (or eggs, depending on which you decided to use).

    Mix in pancake mix.

    Drop 1 tablespoonfuls of dough on an ungreased baking pan. Space disks about 2 inches apart. Cook for 10-13 minutes or until edges are lightly browned.

    Let cool for 2 minutes after they’ve been removed from the oven.
