Cheesy Sweet Potato Wedges

  • 1 medium sweet potato
  • 1 tablespoon olive oil
  • 2 teaspoon salt
  • 1/4 cup cheese (mozzarella recommended)
  • Step 1

    Rinse and dry the sweet potato.

  • Step 2

    Use a fork to poke holes throughout the potato.

  • Step 3

    Microwave for 7 minutes, or until soft.

  • Step 4

    Slice the sweet potato lengthwise into 8 wedges.

  • Step 5

    Pour olive oil into pan. Place the sweet potatoes in the pan. Sprinkle with salt.

  • Step 6

    Cook until brown and slightly crispy.

  • Step 7

    Sprinkle with cheese then remove from pan when thoroughly melted.
