Garlic and Onion Mashed Cauliflower

Let’s face it – cauliflower isn’t the most appealing vegetable of the bunch. Colorless and bland, it’s not the first thing your eye goes to at the supermarket. But there are tons of ways to spice up this decidedly boring vegetable, while keeping your meals healthy and carb-free. This recipe for cauliflower mashed potatoes is an easy and healthy side dish to accompany any meal.

Prep Time: 5 minutes
Cook Time: 20-15 minutes
Total Time: 25 – 30 minutes

Servings: 3

Ingredients:
1 head of cauliflower
2/3 of an onion, chopped and diced
2 cloves of garlic, chopped
Salt and pepper to taste

Directions:

1. Boil cauliflower in a pot until soft (10-15 minutes).
2. While cauliflower is boiling, sauté onions and garlic in olive oil until brown on a medium-sized skillet or saucepan. Add salt and pepper for seasoning.

3. Drain cauliflower with a strainer. Pour into a large bowl and mash until soft.
4. Once onions and garlic are brown, pour into bowl with cauliflower and continue mashing until soft. Mix in some Gorgonzola cheese for a tangy bite. Serve hot.
