Paleo-Friendly Cauliflower Hummus Good Enough to Eat by the Spoonful

At my apartment, my three roommates and I covet hummus just as much as we cherish a big bottle of wine. Anyone that comes across our fridge will notice that we have a hummus tracker proudly hanging on the front, where we mark off each hummus that we finish. I’m not sure if we should be proud or embarrassed at the fact that we go through enough hummus’ that we feel the need to track them. One might call it a “commodity” in our household.  

As you can imagine, we really enjoying trying a variety of flavors—it keeps us on our toes. This cauliflower hummus really threw us for a loop because it doesn’t have any chickpeas at all. That’s right, it’s paleo. It’s great to dip with different types of vegetables, but you could honestly eat it with a spoon because it tastes so good.

    Put all of the ingredients into a food processor or blender and blend, blend, blend.

    Add more red pepper flakes if you want it spicier, then sprinkle some paprika on top to garnish.
