Caramelized Apple Crepes

Crepes: the delicious breakfast treats that everyone seems to love, but very few know how to make. I’m here to tell you that they’re surprisingly easy to make, as long as you have a good nonstick pan and the few usual household ingredients. Crepes allow for a lot of creativity for filling, with recipes online ranging from sweet banana Nutella crepes to savory spinach and cheese. For the savory variety, most recipes suggest replacing the sugar and vanilla with one more tablespoon of salt and some kind of herb or spice. I decided to make a caramelized apple and cinnamon sugar filled crepe for more of a post-Thanksgiving feel, but the same batter can be used for any combination of fruits or chocolate you have around.

Total Time: 30 minutes

Servings: Makes about 10 medium-sized crepes

Ingredients:
For Filling:
2 apples, peeled and diced
2 tablespoons butter
3 tablespoons sugar
1/2 teaspoon ground cinnamon

For Crepes:
2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
3 tablespoons melted butter (and extra for coating pan)
1/4 teaspoon salt
2 1/2 tablespoons sugar
1 teaspoon vanilla extract

Directions:
1. For filling, melt 3 tablespoons butter in small pan. Once butter is bubbling, add diced apples and cook until lightly tender, about 8 minutes.

2. Add sugar and cinnamon, and toss for about 2 minutes until sugar is caramelized and slightly crispy. Remove apples, keep warm and ready to fill crepes later.

3. For crepe batter, mix ingredients in a bowl and stir to get rid of any lumps.

4. Set burner at medium-heat and and coat pan with butter. Add small circle of batter to warm pan, enough to make thin layer.

5. Swirl pan to distribute thin layer of batter.  Cook for about 30 seconds or until outer edges start to lightly brown.
6. Flip and allow for crepe to cook for another 15 seconds.

7. Carefully remove crepe, add small tablespoon of filling to middle, fold crepe over and enjoy – add whipped cream if you’re looking for a more dessert-like crepe!
