How to make Butterscotch Pumpkin Cheerio Bars

One of my favorite parts about fall is the return of pumpkin foods. It seems like every year there are more and more pumpkin flavored drinks and snacks, and I always find myself looking for and trying the latest ones. So when I discovered butterscotch pumpkin cheerio bars, you can say I was pretty excited.

Using the simplest of ingredients, this no bake snack bar is both satisfying and the perfect on the go snack for the next time you're running late to class or need a midday pick me up.

Butterscotch Pumpkin Cheerio Bars

  • Servings: 12
Ingredients
  • 11 ounce butterscotch chips
  • 3/4 cup light corn syrup
  • 3 tablespoon butter
  • 1 1/2 cup miniature marshmallows
  • 1 teaspoon pumpkin pie spice
  • 6 cup Pumpkin Spice Cheerios or regular Cheerios
  • 1 cup chocolate chips
  • 1/8 teaspoon cinnamon

Step 1

In a large bowl, combine butter, light corn syrup, butterscotch chips, and mini marshmallows. Microwave for 2-3 minutes and mix.

Step 2

Add pumpkin spice to mixture until combined.

Step 3

Mix in Cheerios until fully combined.

Step 4

In a greased pan, press Cheerio mix until evenly spread.

Step 5

In a small bowl, melt chocolate chips in the microwave (stopping every 30 seconds to stir) until fully melted and add in cinnamon.

#SpoonTip: use white chocolate chips if you have them!

Step 6

Drizzle melted chocolate over the bars.

Let butterscotch pumpkin cheerio bars cool, then serve.
