Budget Asian Miso Soup with Rice Noodles
I came up with this recipe when I was in the mood for something quick but also really delicious. I absolutely love Asian food so I decided to have a go at making this soup. The great thing about this recipe is that you can adapt very easily to something different. For example, I've used prawns as the main protein in this recipe but you can just as easily make it vegetarian and use tofu or make it more meaty and use pork or beef mince. If you end up going that route, probably best to leave out the fish sauce.
All of the ingredients can be found in your regular supermarket, however I've found that buying the Asian ingredients from an Asian supermarket can be a lot cheaper and you tend to get more for your money. I was able to make this recipe even cheaper by buying a stir fry vegetable pack rather than the individual vegetables. I would highly recommend this as it will save you money and time.

Ingredients
- 150g prawns cheaper to buy frozen
- 2 tablespoons soy sauce
- 2 tablespoons sweet chilli sauce
- 1 teaspoon fish sauce
- 1 teaspoon Chinese-5-spice
- 4 spring onions
- 2 cloves ginger
- 2 centimetre piece ginger
- 1 tablespoon coconut oil or sunflower oil
- mixed vegetables eg pak choi broccoli beans
- 2 tablespoons miso paste 2 sachets
- 1 litre water
- chilli flakes optional
- 2 nests rice noodles
