Maybe you're wondering what amaranth is, let me introduce it to you if you aren't already familiar. Amaranth is one of the smallest grains out there, but nutritionally hearty and dense. It stands out as a complete protein, as most grains aren't. Because it's so tiny, popping it for baking purposes adds some volume and a nice toasty flavor. You can do this at home over the stove.

Ingredients
  • 3/4 cup popped amaranth
  • 2 tablespoons gluten-free rolled oats
  • 1 tablespoon chia seeds
  • 2/3 cup maple syrup
  • 2/3 cup pecans
  • 1/4 cup coconut oil melted
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Step 1

Preheat oven to 325°F. Measure all ingredients into a small bowl.

Mix until all ingredients are thoroughly combined. Next, line a baking tray.

Pour the mixture out into a fairly even layer.

Bake for 20 minutes, or until edges turn a rich (but not burnt) brown. Let cool completely.

Break brittle into pieces with your hands.
