Because of COVID-19, everyone is forced to live a new norm. Students across the nation are confined to their homes, trying to fill time. Are you in need of an activity during Quarantine? It is the perfect time to try some new foods and get creative! Instacart any food you can get and start cooking. Here are a few simple breakfast recipes to make while stuck in the house. Minimal ingredients are required. Stay home and stay safe!!

1. Peanut Butter Banana Honey Toast

2. Whipped Coffee

    Ingredients

  • 2 tablespoons sugar
  • 2 tablespoons instant coffee
  • 2 tablespoons hot water

    Add sugar, instant coffee, and hot water in a bowl. Mix with an electric hand mixer for 3 minutes until fluffy and light brown. (A hand-whisk will take longer.)

Social distancing is not the most ideal situation for coffee addicts like myself. Starbucks coffee isn't exactly in reach anymore. I decided to try the Tik Tok famous whipped coffee. It is one of the biggest cooking trends of quarantine. It is simple to make, but very strong. I would not advise eating it plain. Get creative and top it on smoothies, iced coffee, almond milk, etc. It'll definitely wake you up in the morning.

3. Low Carb Everything Egg White Wrap

  • 3 egg whites
  • 1 cup spinach
  • 1 low carb wrap
  • Feta cheese
  • Everything Bagel seasoning
  • 1 Tbsp. olive oil

    Place 3 egg whites in a bowl and whisk until well mixed.

  • Step 2

    In a non-stick pan, heat olive oil over medium heat. Add spinach and mix around until wilted.

  • Step 3

    In a separate non-stick pan, spray pam spray and scramble egg whites. Once the egg whites are almost cooked, add spinach and feta to the pan.

  • Step 4

    Warm up the low-carb wrap in toaster for about 1 minute. Place the egg whites with spinach and feta in the low-carb wrap. Sprinkle Everything Bagel seasoning on top and roll the wrap.

Who doesn't love eggs? Egg whites are high in protein, low in everything else. The egg whites, spinach, and feta make protein-and-fiber-filled breakfast. The low carb wrap is optional of course, but it makes the dish more satisfactory. Everything bagel seasoning is my absolute favorite thing to top off my meals with. It provides the flavor of a bagel without the carb load. It is available almost everywhere, but my favorite brand is the Trader Joe's everything but the bagel sesame seasoning.

  • 1 cup almond milk
  • 3/4 cup non-fat greek yogurt
  • 1 cup banana
  • 2 tablespoons peanut butter
  • 1 teaspoon vanilla
  • 1 tablespoon flax seeds

If you can't tell, I LOVE peanut butter. It has been my quarantine addiction, which is why this smoothie is my absolute favorite. Add some coffee whip on top. Trust me, it's delicious. There is an abundance of smoothie flavors, and we all have the time to try them all. Gather some of your favorite fruits and experiment until you find your ideal smoothie.
