How to Make Baked Parsnip Fries

The parsnip (the paler, less popular cousin of the carrot) has a sweet, nutty flavor that isn’t found in a lot of root vegetables. While they are available year-round, these veggies are sweetest during the late autumn and winter. A warm handful of these crispy, salty fries makes for a delicious, seasonally appropriate snack or a great side to your favorite cold-weather comfort food. Not to mention, they are extremely versatile—try them with different combinations of nut butters and added spices, or for a more savory twist, try tossing with curry powder or paprika. So ditch those fatty French fries and opt for the fun, healthy alternative!

Ingredients:
7 medium parsnips
2 tablespoons preferred nut butter
1 tablespoon extra virgin olive oil
Sprinkling of sea salt

Directions:
1. Preheat oven to 400° F.
2. Peel the skin off parsnips and cut into French-fry sized pieces.
3. Whisk nut butter and olive oil in a bowl until smooth.
4. Toss parsnips in the mixture with your hands (make sure the coating is fairly even).
5. Spread fries on a baking sheet (lining with parchment paper makes for easy cleanup) and sprinkle with salt.
6. Bake for 45 minutes or until crispy and browned.
