Make Baked Apples 2 Ways Using Your Trusty Muffin Tin

Ah, October. A month filled with fall festivities, apple picking, pumpkin patches, and tons of schoolwork. It's the perfect time to visit your local apple orchards—if you can find the time.

If you've found the time to go apple picking, chances are you're stuck with a bunch of apples. Unfortunately, with midterms right around the corner, there's barely enough time to eat the apples, let alone bake with them. 

Well, good news. Here are two affordable recipes that will save you time and money (and bless your tastebuds).

Apple Cinnabon Muffins

  • Cook Time: 20 mins
  • Total Time: 40 mins
  • Servings: 12
Ingredients
  • 3 apples any kind
  • 1 can prepackaged cinnamon rolls
  • 4 eggs
  • 1/2 cup milk preferably almond
  • 1 1/2 tablespooon cinnamon
  • 1 teaspoon vanilla extract optional
  • 2 tablespoon butter
  • 1 1/2 cup brown sugar

Step 1

Cut the apples and the cinnamon roll dough into small cubes and put aside.

Preheat oven to 375°.

Step 3

Melt butter in a saucepan over medium heat. Once melted, add the cubed apples and the brown sugar, and stir.

Once the mixture starts to bubble, reduce heat to a simmer. Let simmer while doing the next step.

While the apples, brown sugar, and butter simmer, whisk the eggs, milk, cinnamon, and vanilla extract in a bowl.

Step 6

Add the cubed cinnamon roll dough into a greased muffin pan. Remove apple mixture from heat and spoon the mixture on top of the Cinnabon dough. Pour the whisked eggs, milk, cinnamon, and vanilla extract into each muffin tin. Leave a little room for the muffins to rise.

Place muffin pan in oven and bake for about 15-20 minutes, or until golden brown.

Remove from oven and drizzle the icing (from the can of cinnamon rolls) on each muffin if you so wish. Let cool. Remove from tin and enjoy!

Apple Roses

Ingredients
  • 1 can crescent roll dough
  • 2 apples thinly sliced preferably red and on the smaller side
  • 1 1/2 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup melted butter
  • 1 egg
  • 1 tablespoon water

Step 1

Thinly slice apples.

Step 2

Preheat oven to 375°.

Step 3

Open crescent roll dough and separate along lines into individual crescents.

Roll out crescents into six to eight inch strips.

Brush/spoon melted butter across strips, then sprinkle on brown sugar and cinnamon.

Step 6

Place sliced apples along the strip.

Step 7

Whisk egg and water in a bowl. Brush/spoon egg and water mix onto the apples, as you did with the butter on the dough.

Roll the strip.

Step 9

Placed rolled dough strips/ apples in muffin tin.

Bake at 375 for 15-20 min, or until golden brown and flaky.

Remove from oven and let cool.
