Bacon Pancake Dippers

Brunch is by far the best (and happiest) meal of the week. There is nothing better than a meal surrounded by great friends and lots of mimosas. If the socially acceptable excuse to drink in the AM isn’t enough to make you an avid brunch eater, this recipe definitely will. Bacon pancake dippers are easy to make and fun to eat.

Prep time: 10 minutes
Cook time: 15 minutes
Total time: 25 minutes

Servings: about 12 dippers

Ingredients:
1 cup pancake mix
1 package bacon
1 egg
1 tablespoon vegetable oil
¾ cup milk

Directions:
1. Cook bacon according to package directions

2. In a large bowl, mix together pancake mix, egg, oil and milk until combined

3. Pour mixture into a Ziploc bag and cut one corner

4. Butter a pan over medium heat
5. Pour batter into a long oval shape

6. Press bacon into batter

7. Pour thin layer over bacon

8. Cook until batter bubbles in the middle and flip

9. Cook second side for 1-2 minutes
