  • 3 Gala Apples
  • 3 Granny Smith Apples
  • 2 Tablespoons Granulated Sugar
  • 1 Tablespoon Flour
  • 1/2 teaspoon Cinnamon
  • 1/4 Cup Flour
  • 1/4 Cup Brown Sugar light or dark
  • 1/4 Cup Rolled Oats
  • 2 Tablespoons margarine

  • Step 1

    Heat Oven to 400°. Spray 11 x 7 baking dish with non-stick cooking spray. Peel and cut the apples into slices (if you have an apple peeler it makes the process really easy)

    In a large bowl, combine the apples with the granulated sugar, flour, and cinnamon. Spread evenly in the baking dish.

    In a medium bowl, combine the topping ingredients except the margarine. With a pastry cutter or fork, cut in margarine until the mixture looks like coarse crumbs. Sprinkle topping evenly over fruit mixture.

    Bake at 400° for 35-40 minutes or until apples are tender and topping is golden brown.

  • 3/4 Cup Water
  • 1/4 Cup packed Brown Sugar

  • 1/2 Cup Flour
  • 1 Tablespoon Granulated Sugar
  • 1/2 teaspoon Salt
  • 2 large Eggs
  • 2/3 Cup Milk
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Unsalted Butter
  • 3 to 4 large Granny Smith and Gala Apples peeled and sliced into chunks
  • 1/4 Cup light or dark Brown Sugar
  • 1/2 teaspoon Cinnamon
  • 1 teaspoon Lemon Juice
  • Confectioners Sugar for dusting

    Heat oven to 500°. Spray a muffin pan with nonstick cooking spray and place in oven to heat the pan.

    In a large bowl, whisk together the flour, granulated sugar, and salt. In a medium bowl, whisk together the eggs, milk, and vanilla. Whisk the wet ingredients into the dry ingredients until your batter is smooth and no lumps remain.

    Melt the butter in a medium to large skillet over medium-high heat. Add the apples, brown sugar, and cinnamon. Cook for about 10 minutes or until the apples are golden brown. Take off the heat and stir in lemon juice.

    Remove the muffin pan from the oven and distribute the apples into each cup. Quickly pour the batter around the edges in each cup and then over the apples, being sure to distribute evenly. Put into the oven reducing the oven temperature to 425°.

    Bake until the mini pancakes have risen above the edges of the pan and are golden brown, about 18 minutes. Loosen the pancake edges from each muffin cup with a spatula and flip onto a plate. Dust with confectioners' sugar and enjoy!
