I Failed at Making Donuts So I Made These Apple Cider Muffins Instead
Disclaimer: I went into the exploration of this recipe with every intention of creating some gorgeous baked donuts. The only problem was that when you make donuts in the oven, they need to baked in a donut pan.
I, being a college student who lives in a dorm, did not possess such a luxurious item. Instead I attempted to pipe some circles but also filled up a tray of muffins just in case. The "donuts" turned into flat, pancake-esque, treats while the muffins glimmered as I retrieved them from the oven.
They do say some of the best inventions happen by mistake. So here I give you, the Apple Cider Muffin.
Apple Cider Muffins

Ingredients
- 10 tablespoons unsalted butter melted
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3/4 cup buttermilk
- 2 cups apple cider reduced to 3/4 cup
- 3 teaspoons baking powder
- 2 1/2 cups all-purpose flour
- 3 teaspoons cinnamon
- 2 teaspoons nutmeg
- 1 pinch salt
- For topping
- 6 tablespoons unsalted butter melted
- 1 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup granulated sugar
