It’s time to get excited about sweet potato season. Instead of eating sweet potatoes plain (yet still delicious), try stuffing them. Sweet potatoes are full of vitamins and beta-carotene, which makes it the healthier option when it comes to potatoes. It’s so rare that something sweet can be healthy so take advantage of it by microwaving, boiling or baking sweet potatoes. Treat yourself and eat it as a snack or a side anytime of the day.

Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes

Servings: 1

1  sweet potato
1 slice (turkey) bacon, chopped
1 apple, diced
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cinnamon

1. Poke holes in sweet potato with a fork and wrap tightly in aluminum foil.

2. Bake for 45 minutes at 350°F until potato is soft inside. Unwrap foil and cut a slit down the middle of each sweet potato. Let sit until cool enough to handle. (If you don’t have an oven, you can microwave it in a microwave-safe plate for 6 minutes).

3. While potatoes are baking, heat a skillet over medium heat. Add bacon and cook until crispy and place on a paper towel to drain.

4. Add apple chunks to the skillet with nutmeg, cinnamon, salt and pepper and cook until soft. Toss bacon back into the skillet and set aside.

5. Spoon the apple bacon mixture on top and serve!
