Ingredients
  • 1 cup uncooked rice not minute rice
  • 1 can diced tomatoes
  • 1 small can diced green chiles
  • 1 small can drained sliced black olives
  • 1/2 cup shallots or diced green onions
  • 1/2 cup olive oil
  • 16 ounces shredded cheese Mexican style
  • Dash salt

1. Preheat oven to 350 degrees

2. Mix all ingredients well into a 9x13 baking dish

3. Bake in oven for one hour (Stir a few times during baking process, every 20 minutes)

4. Top with avocado, guacamole, sour cream, and extra cheese.
