Ingredients
- 2 TBS. olive oil
- 1/2 cup yellow onion diced
- 1 large carrot peeled and cubed
- 1 celery stock cubed
- 2 garlic cloves minced
- 1 leek the white part minced
- 16oz. or 1 can diced tomatoes
- 1 quart or 1 container vegetable broth low sodium
- 1 bay leaf
- 1 tsp. rosemary
- 1 tsp. oregano
- 1 tsp. thyme
- Salt & Pepper to taste
- 1 cup zucchini cubed
- 4 cups kale finely chopped
- 1 can cannelloni beans low sodium

*pro tip: adding a variety of additional beans (such as pinto, black, or garbanzo) increases thickness, flavor, and protein.
