Girl Scout Cookie season is upon us, which often means eating 1,000 calories in one sitting. Recently my friend from Vandy got me into baking with Quest Bars, so I set out to combine my passion for Samoas with my love of health foods. Try out these Quest Bar recipes to make your own healthier, gluten free versions of the Girl Scout classics.

Samoas

Easy

Prep Time: 5 minutes
Cook Time: 6 minutes
Total Time: 30 minutes (with cooling)

Servings: 3 cookies

Ingredients:

1 Coconut Cashew Quest Bar
3 tablespoons shredded coconut
3 tablespoons maple syrup
4 tablespoons dark chocolate (chips or melting chocolate)

Directions:

1. Preheat oven to 380ºF.

2. Microwave Quest Bar for 10 seconds, then break into 3 even pieces. Press pieces into circles, about an eighth of an inch thick. Using a knife, cut out a small circle from the center of each cookie.

3. Bake cookies for 3 minutes, then flip and cook for 3 more.

4. Remove from oven and let cool for at least 10 minutes.

5. Melt the dark chocolate in the microwave, then spread on one side of each cookie. Let cool for 10 minutes.

6. In a small bowl, combine shredded coconut with maple syrup. Press a tablespoon of the syrup-covered coconut onto each cookie.

7. Drizzle melted chocolate over the top of each cookie and let cool before eating.

Servings: 4 cookies

Ingredients:

1 Peanut Butter Supreme Quest Bar
2 tablespoons peanut butter
2 tablespoons powdered sugar
3 tablespoons milk chocolate (chips or melting chocolate)

Directions:

1. Preheat oven to 380ºF.

2. Microwave Quest Bar for 10 seconds, then break into 4 even pieces. Press pieces into circles, about an eighth of an inch thick.

3. Cook the circles for 3 minutes, flip them and bake for 2 minutes more.

4. Remove from the oven and let cool for 10 minutes.

5. While cookies are cooling, mix together powdered sugar and peanut butter in a small bowl.

6. Once cookies are cool, spread peanut butter-powdered sugar mixture on the top of each cookie.

7. Freeze for 10 minutes, then dip in chocolate. Let cool for 10 minutes before eating.

Thin Mints

Prep Time: 2 minutes
Cook Time: 6 minutes
Total Time: 30 minutes (with cooling time)

Servings: 4 cookies

Ingredients:

1 Chocolate Brownie Quest Bar
4 tablespoons dark chocolate (chips or melting chocolate)
½ teaspoon peppermint extract

Directions:

1. Preheat oven to 400ºF.

2. Microwave Quest Bar for 10 seconds, then break into 4 even pieces. Press pieces into circles, about an eighth of an inch thick.

3. Bake for 6 minutes, remove from oven and let cool for at least 10 minutes.

4. Melt chocolate chips and mix in peppermint extract.

5. Dip each cookie in chocolate and let cool for 10 minutes.

Do-Si-Dos

Prep Time: 3 minutes
Cook Time: 5 minutes
Total Time: 18 minutes (with cooling time)

Servings: 2 cookies

Ingredients:

1 Peanut Butter Supreme Quest Bar
2 tablespoons peanut butter
2 tablespoons powdered sugar

Directions:

1. Preheat oven to 380ºF.

2. Microwave Quest Bar for 10 seconds, then break into 4 even pieces. Press pieces into even circles, about an eighth of an inch thick.

3. Cook the for 3 minutes, flip them and bake for 2 minutes more. Remove from oven and let cool for 10 minutes.

4. While cookies are cooling, mix together powdered sugar and peanut butter in a small bowl.

5. Once cookies are cool, top two cookies with the peanut butter mixture. Press the two halves together to make a sandwich.

Lemonades

Prep Time: 4 minutes
Cook Time: 6 minutes
Total Time: 30 minutes (with cooling time)

Servings: 4 cookies

Ingredients:

1 Lemon Cream Pie Quest Bar
2 tablespoons white chocolate
½ teaspoon lemon juice

Directions:

1. Preheat oven to 380ºF.

2. Microwave Quest Bar for 10 seconds, then break into 4 even pieces. Press pieces into circles, about an eighth of an inch thick.

3. Press a knife into the cookie to create 8 evenly-spaced lemon wedge lines.

4. Bake the cookies for 6 minutes. Take out of the oven and let cool for 10 minutes.

5. While cookies are cooling, melt 1 tablespoon of white chocolate. Mix lemon juice with white chocolate.

6. Spread on bottom of each cookie and let cool for 10 minutes.
