Right around the first frost of the year, sweet potatoes come out of the ground and onto our dinner plates. This year, get creative and dress up the potato with one of the 5 suggestions below.

Directions:
Wash the potato. Using a fork, poke holes all over. Microwave on full power for about 5 minutes (or, if your microwave has it, press the potato button). Once the potato is cooked, careful cut it in half and go crazy!
1. Brown sugar and salt
For this one, use less sugar than salt. They are sweet potatoes, after all. Mash the inside of the potato to combine.
2. Plain and simple
Hot, fresh, mashed sweet potatoes are like a call to home after a long day of classes. Take a few bites of the skin to get the most out of the sweet potato’s nutrients.
3. Add a pinch of paprika and salt
You can’t go wrong with both a sweet and spicy potato.
4. The traditional mashed potato
Maybe lay off of the sour cream, but a little butter and salt have never hurt.
5. Marshmallows on top
For those Thanksgiving-style casserole goodness cravings, this hits the spot. Once the potato is cooked and cut open, drop in a few mini marshmallows. Microwave for 20 seconds and mash.
