4th of July Popsicles to Get Your Red, White, & Booze On

It's the best time of year: summertime.  And that means pool parties, ice cream, and poolside drinking. It also means one of the country's proudest holidays: the 4th of July. And what's the best way to mark America's independence?  With 4th of July popsicles.

Using the best fruit that summertime has to offer paired with the booziest of alcohols, these popsicles will keep you more lit than the fireworks your neighbor will set off until 3 am. The red and blue popsicles have been adapted from Real Simple, while I put my own twist on the Minimalist Baker's white pop.

Red Hot Margarita Pop

  • Prep Time: 15 mins
  • Cook Time: 6 hrs

Ingredients
  • 1/3 cup sugar
  • 1 seedless watermelon
  • 2 tsp cayenne pepper
  • Juice from 1 lime
  • 1/4 cup tequila
  • Fresh mint leaves

Step 1

Place lime juice, tequila, and sugar into a blender or food processor and blend until the sugar has dissolved.

Step 2

Add the cayenne, watermelon, and mint leaves, and blend until liquified.

Step 3

Pour into ice pop molds and freeze for at least 6 hours.

White & Creamy Colada Freeze

Ingredients
  • 1 can coconut milk
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 tsp vanilla bean paste
  • 1/4 cup coconut rum
  • 1 cup fresh pineapple chunks

Step 1

Pour coconut milk, sugar, the vanilla extract and paste, and rum into a blender or food processor and blend until the sugar is dissolved.

Step 2

Pour in pineapple and blend until almost completely smooth.

Step 3

Pour into ice pop molds and freeze for at least 6 hours.

Blueberry Champagne Pops

  • Prep Time: 15 mins
  • Cook Time: 6 hrs
  • Total Time: 6 hrs 15 mins

Ingredients
  • 1 cup mix blueberries and blackberries
  • 1 cup Champagne or Prosecco
  • Juice from half a lemon
  • 2 tsp sugar

Step 1

Put berries, lemon juice, and sugar in a blender or food processor and blend until liquified.

Step 2

Slowly add champagne to the mixture and blend. Note: you HAVE to add in only a little bit at a time, otherwise the mixture will explode because of the carbonation.

Pour mixture into ice pops and freeze for at least 6 hours.

These 4th of July popsicles are so easy to make and even easier to eat. Celebrate Independence Day the way the Founding Fathers would have wanted you to: drunk and proud to be an American.
