4 Things You Didn’t Know You Could Make With Almond Flour

You grab a delicious cookie made with white flour and immediately feel guilty and begin to regret it. Happens to all of us, right? I have a solution for you: almond flour! Almond flour, which is simply ground almonds, is a great alternative to white wheat flour — it’s low carb, gluten free, high in fiber and protein, and filled with healthy fats. The best part is: almond flour tastes just like traditional white flour! In my opinion, it actually makes anything you bake ten times fluffier. Almond flour is definitely a winner in my book!

Besides it adding a lot of fluffiness to baked goods, this flour also adds a hint of sweetness that I absolutely love. I’ve made many things with this flour, and everyone, from toddlers to adults, do nothing but rave about it! Little kids and picky eaters love the sweet taste the almond flour gives and usually want seconds, thirds, and fourths! I have been using almond flour for two years now and I am never going back to wheat flour. 

There are endless recipes and delicious desserts you could make with almond flour: waffles, cakes, cookies, cupcakes, bread, and even pizza. You can even use almond flour as bread crumbs to make chicken nuggets or fish! When I bake with this flour, I like to keep my recipes super simple. Depending on what I make, I use different amounts of almond flour, sugar, eggs, and baking powder as the base. If I want to add more flavor, I’ll add in cacao powder, chocolate chips, walnuts, coconut, or cinnamon. Simplicity plus health all in one! PS: My favorite brand of almond flour is this one! They sell a 3 pound bag at Costco and it lasts forever. So worth it!

Simple Sponge Cake

  1. Preheat oven to 325F.
  2. For all six eggs, separate the egg white and the yolk. Beat the egg whites until white and cloudy. Put the yolks aside; they will be used later.
  3. Add the sugar and mix until well combined.
  4. Add the yolks and mix until well combined.
  5. Add the baking powder and mix until well combined.
  6. Add the almond flour and mix until well combined. If you feel the batter is too liquid-like and not thick enough, you can add more almond flour until the batter thickens.
  7. Fold in optional add-ins (chocolate chips, almonds, coconut shreds, raisins, etc.)
  8. Pour batter in cake pan that is greased with oil and flour. Bake in oven for 30 minutes and until golden brown. Enjoy!

Coconut Cookies

  1. Preheat oven to 325F.
  2. Crack egg and whisk thoroughly in bowl.
  3. Add in rest of wet ingredients (raw honey, apple sauce, almond milk). Stir until well combined.
  4. Add in dry ingredients (almond flour, baking powder, cinnamon). Stir until well combined.
  5. Fold in unsweetened coconut flakes. If batter comes out too liquid-like/not cookie-like, add more almond flour until it thickens.
  6. Form batter into cookie shape (as big or as small as you’d like) and place on baking sheet with parchment paper. Insert in oven for 30 minutes – enjoy!

Snickerdoodle Cake Balls

  1. Preheat oven to 350F.
  2. Beat egg whites, sugar, almond flour, baking powder, and cinnamon until everything is well combined. Make sure the texture is thick enough to make balls — if it’s too thin, add more almond flour.
  3. Form the dough into balls and line on parchment paper covered baking sheet. Insert into oven for half an hour – enjoy!

One Bowl Waffles

  1. Whisk the almond flour, egg whites, baking powder, and sweetener together in a bowl until the batter is smooth.
  2. Place the batter in pre-heated waffle maker for around 5 minutes (every waffle maker is different – keep checking to make sure it’s not undercooked or burning)
  3. Remove from waffle maker and don’t forget to drizzle some honey or syrup on top and to add your favorite toppings! Enjoy!
