4-Ingredient Kale and Watermelon Summer Salad

Queen Bey dropped another album and it couldn’t have come at a better time. Reminiscing in my adoration for the pop icon, I re-watched one of my favorite music videos, 7/11, and was inspired by her ‘Kale’ sweatshirt to create a salad.

This salad takes about five minutes to make, so you’ll be right back to lip-syncing and dancing along in no time. It’s light, refreshing, and with just four ingredients, it’s perfect for when you need a little something to snack on that covers all the bases – sweet, salty, tangy, protein, fruits, and vegetables. It would make a great addition to any potluck this summer. (Might I add, it would go great with some Lemonade.)

#SpoonTip: Make the salad your own by adding in thinly sliced red onion, Craisins, almonds, honey, etc. 

Kale and Watermelon Summer Salad

    Wash and chop kale into bite-sized pieces and place it in a bowl. Make sure to remove the stem.

    Cut watermelon into bite-sized pieces and place them in the bowl with the kale.

    Sprinkle on some feta.

    Dress with homemade or store bought dressing to taste. Toss and serve.
