Granola is SO versatile, it is great for toppings, cereal, or just a snack. 

So when I heard about a granola that didn’t require 45 minutes of cooking (and salivating at the smell in my apartment), I jumped at the idea. Well, until I saw the first ingredient was dates.

Dates?!

Basically dates are a small, sweet fruit in the palm family. They are packed with potassium, magnesium and fiber.

Although initially turned off by the appearance, it is easy to move past when you combine with oats and blend. I nicknamed this granola “rawnola” because of its three basic, raw (or minimally processed) ingredients, which are also vegan.

This recipe is perfect for topping on nice-cream, cereal or yogurt. And feel free to add cinnamon or cocoa powder to make a chocolate version.

And if you’re still not interested, I’ll leave you with this - it might as well be sold and labeled as cookie dough, minus the salmonella risk #noregrets.

    Ingredients

  • 8-10 Medjool dates
  • 1/2 cup rolled oats
  • 1 tablespoon stevia or other sweetener
coffee, milk, cereal, muesli, granola, tea, chocolate

  • Step 1

    Place all ingredients in a food processor.

    Blend for 1 min, or until sticky and chewy. Scoop out, and enjoy!
