Healthy 3-Ingredient Chocolate Quinoa Squares

Think about those popcorn balls that everyone always got during Halloween. If you could eat those every day while eating healthy, would you?

Enter these chocolate quinoa squares, which are made up of popped quinoa (which have a scarily similar taste to popcorn), only they’re packed with protein and will help you keep up your energy throughout the day.

Chocolate Quinoa Squares

  • Prep Time: 30 minutes
  • Cook Time: 1 minute (plus 1 hour refrigeration)
  • Total Time: 1 hour 30 minutes

Ingredients
  • 1/4 cup quinoa
  • 6 medjool dates
  • 1 tablespoon cocoa powder
  • 2 tablespoon water

Step 1

Make popped quinoa.

Step 2

In a food processor (or if you don’t have one, using a motor and pestle), blend popped quinoa until it reaches a flour-like consistency.

Step 3

Add dates and blend. Add in additional water until the mixture forms a dough.

Step 4

Line a container with plastic wrap and press dough into the container.

Step 5

Refrigerate for one hour.

Step 6

Take bars out of plastic wrap and cut into squares. Enjoy!
