That’s the secret ingredient in these moist, slightly sweet and savory muffins that make for the perfect brunch dish, hangover or not.

Servings: 12 muffins

Ingredients:

3 cups Bisquick
4 teaspoons sugar (increase to 2 tablespoons if you prefer a sweeter muffin)
1 12-oz. beer
Optional: 1 cup shredded cheddar cheese, 3 tablespoons chopped green onion or green peppers

Directions:

  1. Preheat oven to 350 °F.
  2. Mix together Bisquick, sugar, and beer in a bowl until just combined. Do not overmix! Add optional cheese and scallions. Fill each muffin tin 2/3 of the way with the batter.
  3. Bake for 15-20 minutes. The muffins are done once you insert a toothpick into the center and it comes out clean.
  4. Let cool and enjoy!
