How to Stuff an Avocado for Every Meal of the Day

I love avocados. So why not eat them for breakfast, lunch, and dinner? So I concocted three simple avocado recipes that will satisfy your avocado craving, and give you not only a diverse meal plan, but also an aesthetically pleasing one. Dinner never looked so good. 

Avocado Three Ways

Ingredients
  • 3 halves avocado
  • 1 egg
  • 1/4 cup turkey bacon bits
  • 1/4 cup cottage cheese
  • 1/4 cup shredded chicken
  • 1/4 cup chopped spinach or romaine lettuce
  • 1/4 cup cooked and rinsed quinoa
  • 2 Tbs. chopped carrots
  • 2 Tbs. chopped red pepper
  • 1/4 cup cooked spinach
  • 1/2 a lemon
  • Salt and pepper

Step 1

Scoop out partial flesh of three avocados

Step 2

Crack 1 egg into avocado and salt and pepper to taste. Bake at 350 ° F for 15 minutes.

Sprinkle bacon bits on top.

Step 4

In a bowl mix cottage cheese, chicken, chopped spinach or lettuce, and rest of bacon bits, then mix.

Scoop into avocado and drizzle your favorite vinaigrette on top.

In a separate bowl mix the quinoa, carrots, red peppers, and cooked spinach.

Scoop into avocado and squeeze the lemon on top. Salt and pepper to taste.
