Similar to arroz con leche, Indian rice pudding–or kheer–is a dessert that involves soaking rice in hot milk and combining it with spices. It’s rich, it’s creamy and flavors like cinnamon and cardamom make it taste far more complex than it truly is. With one dish and easy prep, this often overlooked dish is one that should definitely be attempted.

    Heat milk, coconut milk and sugar in large saucepan until gently boiling.

    Simmer basmati rice in milk mixture until rice softens, about 20 minutes.
