You Won’t Believe These Pancakes Are Vegan and Gluten Free
It doesn’t get more classic than banana pancakes. Appropriate for all meals of the day and they stack up in less than 20 minutes. Even if you’re not about the plant-based and gluten free lifestyle, I can guarantee you’re going to love these (because they taste just like the conventional version you probably grew up on).
Gluten Free Vegan Banana Pancakes

Ingredients
- 1 ripe banana
- 1/2 cup gluten free all purpose flour blend
- 1/2 cup gluten free oat flour
- 2 tablespoon coconut sugar
- 1/2 teaspoon baking soda
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 tablespoon flax meal
- 2 tablespoon hot water
- 3/4 cup unsweetened almond milk
Step 1
Make a flax egg in a small bowl by combining hot water with flax meal.
Step 2
Mix together flours, coconut sugar, leavening agents, salt and cinnamon in a medium bowl.
Step 3
Mash banana and approximately half of the almond milk into the dry mixture using a fork.
Step 4
Add flax egg and remaining almond milk, stir until well combined.
Step 5
Heat a griddle or frying pan with a quick smear of vegan butter or non-stick spray.
Step 6
Cook until bubbles begin to form at the surface, then flip.
Step 7
Stack ’em up with coconut sugar, extra banana and a sprinkle of nuts.
