If there's one thing that's a constant in my daily life, it's chocolate. I can't remember the last time I went a day without chocolate (which is probably not a good thing.) Safe to say, I'm addicted. Anyways, in an attempt to make my addiction a little healthier, I created this coconut chocolate chia pudding recipe.

The chocolate chia pudding recipe is as simple as it gets—the hardest part is waiting for it to thicken up in the fridge. This is a great thing to make for dessert, or even an on-the-go snack (it's portable!). I like making multiple jars ahead of time so that I always have a semi-healthy treat to curb my cravings.

Coconut Chocolate Chia Pudding

    Ingredients

  • 1/2 cup light coconut milk
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons chia seeds
  • 1 teaspoon maple syrup
  • 1 pinch cinnamon
  • 1 squirt whipped cream optional

  • Step 1

    Shake up your can of coconut milk, then add all of your ingredients to a mason jar.

    Shake your jar well for one minute, then place it in the fridge for a minimum of 30 minutes (the longer you leave it, the thicker it will be).

    Take your jar out, squirt on some whipped cream if you're feelin' it, then enjoy!

Thanks to the coconut milk, this comes out to be more of a mousse than a pudding, which is a win in my book. It's rich, creamy, and, most importantly, chocolatey! If you want to make this for a post workout snack, I suggest adding a scoop of chocolate protein powder and an extra tablespoon of coconut milk. Get in the kitchen, or your dorm room, or heck, anywhere with a fridge and get shaken'.
