Cookies are an easy enough dessert as it is, but holiday baking just got a little easier with this two-ingredient treat. The combination of pumpkin and cake mix yields a cake-like, moist cookie, and the lack of eggs makes the dough a delicious snack as well.

Total Time: 30 minutes

Servings: 24 cookies

Ingredients:

1 15-oz. can pumpkin puree
1 box spice cake mix (can be substituted with carrot cake mix or white cake mix and 3 teaspoons pumpkin pie spice)

Directions:

  1. Preheat oven to 350 °F.
  2. Combine pumpkin and cake mix. Place spoonfuls of cookie dough onto a greased cookie sheet.
  3. Bake for 18-20 minutes. Let cool before eating.
