Without Mom’s homemade matzo ball soup and brisket, making it through Passover chametz-free can be a difficult task.

Cheese seems to be the answer. These simple and yummy recipes will keep you on track to make it through the eight days of Passover without cheating.

Matzo Pizza

Easy

Prep Time: 5 minutes
Cook Time: 1 minute
Total Time: 6 minutes

Servings: 1 matzo pizza (serves 1 person)

Ingredients:

1 sheet of matzo
Tomato sauce (as much or as little as you want)
Shredded mozzarella cheese

Directions:

1. Cover the top side of the sheet of matzo with tomato sauce.

2. Put as much cheese as you would like on top.

3. Microwave for about a minute. Add time if the cheese isn’t melted.

Matzo Nachos

Easy

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Servings: Serves 2-3 people (depends how hungry you are)

Ingredients:

2 sheets of matzo
Shredded cheese
Vegetables of your choice (remember not to use any beans)

Directions:

1. Preheat oven to 350° and line a baking sheet with foil.

2. Break up the sheets of matzo so that they are about the size of nacho chips.

3. Place the vegetables on top of the matzo. Make sure whatever vegetables you are putting on, such as tomatoes, lettuce or peppers, have been chopped to a small enough size.

4. Put as much cheese as you would like on top.

5. Bake on 350° for about 10 minutes, but keep your eye on your nachos to make sure that they do not overcook.
