In case you haven't already heard, Gordo's Ice Cream Bars just opened this summer, and it's pretty sweet! Gordo's is located next to Flaco's Tacos right under the Granville stop. It is a Mexican ice cream and dessert shop that is known for its ice cream bar, where you can create the perfect frozen treat.

The process of creating your perfect frozen treat is quite simple, it only requires three steps: pick, dip and sprinkle! 

First, you pick your ice cream bar. 

There are thirteen different flavors of homemade Mexican ice cream bars. They also introduce new flavors every month. Out of the thirteen flavors, four are vegan: avocado, banana, hibiscus Tea and orange chili spice.

Then, you choose what type of chocolate to dip your bar into.

There are four different dips to choose from: dark chocolate, milk chocolate, white chocolate and butterscotch. This dip creates a hard shell around the ice cream bar.  

Finally, you choose your sprinkles!

If you don't have a sweet tooth, don't worry! This step isn't literally putting sprinkles on your bar, it's choosing what topping to cover the hard shell coating. And the best part? You can choose more than one!

If you're like me, and the amount of choices at the ice cream bar are too overwhelming, no need to fret. They have ready-made, fool-proof combinations for people like us.   

I tried the Dark Knight which is the chocolate ice cream bar dipped in dark chocolate, covered in heath bar crumbs, and drizzled with white chocolate. As someone who deeply loves chocolate, I can confidently say I think this combination is a chocolate lover's dream. You would think this much chocolate would be too overwhelming, but the different textures and variations of how the chocolate give it the perfect balance.
