I’ll just come out and say it: I struggle with keep cool in the summertime. As much as I love the sun on my skin, the ocean breeze, and the smell of pool water and sunscreen, I just constantly radiate heat. This year, I’m on a mission to hack the heat, and I first wanted to start out with the summer favorite: popsicles. But not just any popsicles, oh no, but boozy popsicles.
This has been done before, so what makes these two little popsicles any different than the rest? Since I’m a hard working millennial whose money goes straight to paying off my loans, I don’t have enough money to pay for popsicles molds—yes friends, it’s that bad.
I naturally needed to take a crack at my version of a Mimosa pop. Recipes have been featured on Spoon before, but instead of using regular orange juice, I puréed fresh oranges and used those instead. I was quite impressed with the results!
The next pop I wanted to try was a tart take on a raspberry popsicle. But instead of raspberries, I used pomegranate juice and seeds. Light, refreshing, and paired great with sparkling rosé!
Thank you, Dollar Deal$, for being the true MVPs for my 50-cent Dixie cups, and shoutout to my mom for always keeping champagne and rosé on hand—this video is for you guys.
