Lemonade is a summer staple. From kids with impromptu stands on the corner to swanky bars where cocktails run upwards of $12, the sweet and sugary drink is ubiquitous during those few sunny months. Next time you head to the deck for an afternoon of sunbathing, quench your thirst with this exotic twist on the classic.

Servings: 8 cups

Ingredients:
2 cups sugar*
2 cups unsweetened pineapple juice
2 cups seltzer
1 cup fresh lemon juice
8 lemon slices
Mint sprigs to garnish (optional)

*Low-sugar option: Try making coconut water ice cubes. Coconut water is naturally sweet, so you won’t have to add as much sugar. It will also boost your intake of electrolytes, potassium, magnesium and manganese — what’s not to love?

Directions:
1. In a saucepan, mix sugar with 2 cups of water on medium-high heat. Bring to a boil, stirring frequently until sugar is fully dissolved. Let the syrup simmer for 10 minutes.
2. Once the simple syrup has cooled, add seltzer, pineapple and lemon juice. Add ice and finish with lemon slices and mint sprigs.

In the mood for something fruity and frothy? Blend ½ cup of  the lemonade with half of a frozen banana and 3 cups of diced strawberries.  This chilly treat only makes 1-2 cups, so you might want to consider doubling the quantities — you’re guaranteed to want a whole lot more.
