After those really long days of classes, exams, and work, all of us just want lay on the couch and consume copious amounts of happiness-inducing, calorie packed comfort food. Unfortunately the only foods I’m willing to whip up in my kitchen in the state of almost complete mental exhaustion are mac and cheese and instant ramen.

So with the upcoming school year just around the corner and the impending days of exams and lectures, I came up with a super easy comfort food recipe that can satisfy even the grumpiest version of me. A 5-ingredient chicken hand pie — the glorious, individually portioned, portable cousin of the traditional chicken pot pie.

Chicken Hand Pie

    Ingredients

  • 1 sheet puff pastry, thawed as per package directions
  • 1 cup chopped, cooked chicken (leftover chicken or rotisserie works great)
  • 1/2 cup frozen green peas
  • 3/4 cup condensed cream of mushroom soup
  • 1 large egg
  • Step 1

    Preheat the oven to 400. Combine the condensed soup, chicken, and peas in a bowl.

  • Step 2

    Roll out the thawed dough to about ½ of the original thickness and cut the pastry into four squares.

  • Step 3

    Place some of the mixture into half of each square.

  • Step 4

    Fold the dough over the mixture and press down on the edges with the back of a fork. Make a few slits at the top of each hand pie.

  • Step 5

    Brush with a beaten egg

  • Step 6

    Bake the pies on a parchment paper lined baking sheet for 30 minutes. Let cool for 10 minutes before enjoying.
