Spoon UIUC teamed up with Food & Wine magazine to increase awareness about the problem of food waste on our campus. With a microgrant of just under $100, we created 10 original recipes to show you how you can transform leftover late-night eats into something equally amazing the next day.
Maybe last night you got a little ambitious with your wings order, or your friend promised to go halfsies and then went home early from the bar. Either way, there’s leftover chicken wings sitting in your fridge, and reheating them just doesn’t seem all that appealing.
Save your brunch money and use this recipe to breathe some new life into those wings. Your roommates and your budget will thank you.
Waffle-Battered Chicken Wings

Whisk together waffle mix, oil, and water until thoroughly combined.
Dip each chicken wing in waffle batter.
Arrange chicken wings on the waffle iron, then spoon some extra batter on top and close the lid.
Cook until the batter is golden brown and serve.
Maple Dijon Dip

Place mayonnaise into a small bowl.
Add maple syrup and dijon mustard and stir to combine.
Serve with waffle-battered wings and enjoy!
