Spoon UIUC teamed up with Food & Wine magazine to increase awareness about the problem of food waste on our campus. With a microgrant of just under $100, we created 10 original recipes to show you how you can transform leftover late-night eats into something equally amazing the next day.

Decisiveness doesn’t come easy for most people – well, for my friends and me, it’s always been a hassle. That’s why choosing between a savory or sweet post-game dish is difficult to say the least.

So we came up with this recipe to transform last night’s savory leftover fried rice into tomorrow’s something sweet. And it’s actually one of the simplest things you’ll do today.

You don’t have to compromise when you can have your rice pudding and eat it, too.

Leftover Chinese Fried Rice Pudding

  • Cook Time:20 minutes

    Ingredients

  • 2 cups leftover fried rice
  • 2 cups whole milk
  • 3 tablespoons plus 1 teaspoon sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract

  • Step 1

    In a medium saucepan, heat milk, leftover rice, sugar and salt uncovered for 20 minutes or until mixture has thickened.

    Remove vegetables as they rise to the surface of the milk.

    Stir occasionally and remove from heat once thickened.

    Mix in vanilla extract and serve with whipped cream and cinnamon to taste.
