Vegan Chocolate Pudding You Would Never Know is Actually Good for You

Who doesn’t love pudding? We can’t think of a single person either. And the only thing better than thick and creamy chocolate pudding is a thick and creamy chocolate pudding that also happens to be protein-packed, full of fiber and calcium, vegan and gluten free.

This is arguably the easiest pudding you will ever make, and also probably the most delicious. The secret ingredient is silken tofu (make sure you use silken for best results, not firm) which, when blended with cocoa powder and a little sugar, turns into a spoonable, decadent treat with a rich chocolate flavor.

This pudding makes a perfect healthy dessert, snack, or breakfast, so get blending, people.

    In a food processor or blender, combine tofu, cocoa powder, sugar, and almond milk. Blend ingredients until smooth.

    Pour pudding into cups or a bowl and place into the refrigerator. Allow to set for at least 15 minutes.

    Top with coconut whipped cream or crushed Oreos, if desired. Store in the fridge for up to 5 days.
