20-Minute Strawberry and Champagne Pancakes for Your New Year’s Brunch

New Year’s Eve is nothing without the signature drink, champagne. But who said the party should end at midnight? This pancake recipe pairs perfectly with some New Year’s Day mimosas (hold the OJ) to keep the bubbly flowing all year long.

Strawberry and Champagne Pancakes

    Sift together flour, salt, and baking powder in a bowl.

  2. Whisk the eggs, milk, and oil in a separate bowl.

    Gradually incorporate the wet ingredients into the dry ingredients (it will be kinda lumpy, but that’s totally okay).

  4. Preheat griddle to 375°F.

    Halve and hull the strawberries.

    Put strawberries, sugar, orange zest, orange juice, and cornstarch into a medium sized saucepan. Mash strawberries and turn heat to medium. Bring to a boil and reduce to simmer for 10 minutes with no cover.

    Remove from heat and stir 3 tablespoons of champagne into the sauce.

    Fold the 1/4 cup of champagne into the pancake batter, just until incorporated.

    Cook the pancakes while the sauce is simmering. Use 1/4 cup of batter on a greased griddle for perfect sized pancakes.
