Pour some syrup over toasted Eggo waffles and you get an okay breakfast. Truth be told, though, that probably won’t fill you up too much, and you get next to no protein. This recipe fixes both of these problems by pushing Eggo waffles to their full potential, so you are left with a more filling and protein-heavy breakfast. Sounds like a winner to me.
Protein and hunger aside, the addition of over easy eggs and bacon cooked in syrup — not to mention that both waffles that make up the sandwich have been sautéd in syrup — makes for a delicious breakfast. Oh, and you can make it in 10 minutes or less with only five ingredients. You’re welcome.
Eggo Waffle Breakfast Sandwich

Pour maple syrup in frying pan at medium heat.
Place both waffles in the pan and sauté each side until crispy â roughly 3-5 minutes.
After one waffle side is crispy and the other side is cooking, place a cheese slice on the waffle to allow it to melt. Repeat for other waffle.
Remove the waffles once crispy and the cheese melted, and set them aside.
In the same pan, add bacon slices and pour syrup over top to lightly cover.
Cook the bacon until crispy, then remove and set aside.
Cook the egg in the same pan, using the bacon fat to cook it over easy. Place a lid or plate to cover the pan for 1-2 minutes at medium heat in order to cook the egg over easy. Once the egg whites have set, remove it from the pan.
Place 1 Eggo waffle, cheese side up, on a plate and top with over easy egg. Top with crispy bacon slices and cover with 2nd Eggo Waffle, cheese side down.
Enjoy immediately.
