As a college kid, it’s hard to get breakfast in before that 8 AM financial accounting class. So, I have a proposition: Spiced banana pear muffins. Make a batch of these guys Sunday night, and you’ve got a grab and go breakfast ready for every day of the week. These muffins will be waiting for you at 7:57am when you’re running out of your apartment for class. Be careful though, your roommates might snatch ’em before you do.
 
					Spiced Banana Pear Muffins
Ingredients

- Preheat oven to 375°F. 
 - In a small bowl, mash the ripe banana and set aside. 
 - Peel and dice the pear, then set aside. 
 - Mix the flour, baking powder, spices, salt, and 2 tablespoons sugar in large mixing bowl. 
 - Mix in the egg, milk, and ¼ cup melted butter. 
 - Add mashed banana and chopped pear. 
 - Place cupcake liners in pan and spoon batter into pan. 
 - In a small bowl, combine rolled oats, ¼ cup melted butter, 2 tablespoons coconut sugar, and a dash of cinnamon. 
 - Spoon oat mixture onto muffins and bake in oven for 45 minutes.
