Preheat the oven to 350ºF and grease muffin pan. As you can see, I got a little generous with the sprayingâ¦
Using an electric mixer, combine flour, granulated sugar, baking powder, baking soda, and salt on a low speed until evenly blended.
Adding 1 tablespoon at a time, combine butter into the dry mixture until it is crumbly and with pea-sized pieces throughout.
Pour buttermilk into dough until moistened. Believe it or not, you donât want the dough to come together into a ball. Instead, expect to see various sized pieces of butter and moist flour with the dry pieces still visible.
Using a rubber spatula or spoon, fold over the ingredients from the bottom until further combined. It is not important for the mix to be evenly dispersed. Clumps are welcome.
Using a large spoon, add the mixture evenly into the individual muffin cups. Top each muffin with a little butter to act as a baste while it bakes (optional).
Bake for 25-30 minutes. The finished product should be a dark, golden brown with a lumpy texture. Let cool in pan for 5 minutes before removing.
