Pasta is probably everyone’s go-to weeknight meal, but this classic is in desperate need of a facelift. Take pasta to the next-level by making homemade roasted red pepper and tomato sauce. And if you roast the veggies the night before, this meal will only take 10 minutes to prepare.

    Bring a medium pot of water to boil. Add salt and two tablespoons olive oil. Once boiling, add Capellini and cook according to package directions.

    Chop roasted tomatoes, red pepper, onions and garlic.

    Add chopped vegetables to a frying pan, and heat over medium for 5-6 minutes, until juices have reduced slightly.
