Fiesta Baked Bean Dip

Hosting Super Bowl game day at your place can be stressful; you want to make sure you have enough food, but, more importantly, you want to ensure that the food is up to game-day standards. This fiesta baked bean dip is made with fragrant peppers, savory baked beans and a ton of cheese, making it as flavorful as it is colorful. Also, it’s pretty quick to make, so you can focus on the game.

Cook Time: 15 minutes
Total Time: 25 minutes

Servings: about 15

Ingredients:


2 cups onions, finely diced
2 cups peppers (red, green, yellow — the more colors, the better), finely diced
1 handful chopped cilantro
3 tablespoons butter
salt and black pepper, to taste
1-1/2 cups grated mozzarella cheese
1 cup whole milk
1/3 cup tomato ketchup
1 can baked beans

Directions:

1. Melt butter in sauté pan. Once melted, add onions and peppers and sauté lightly (veggies should still have a bit of crunch). Add salt and pepper to taste.

2. Heat baked beans in pot and add milk and ketchup. Stir until mixed.

3. Pour beans into bowl, add sautéed onions and peppers and sprinkle cheese and cilantro on top.
4. Serve with chips, bread,  veggies or crackers.
